Diabetes-Friendly Mexican Casserole

Ingredients

Makes 6 servings

  • 1 medium spaghetti squash
  • 1 lb ground turkey (ground chicken can be substituted)
  • 1 large onion, diced
  • 1 green bell pepper, medium chopped
  • 6 tbsp olive oil
  • Pink Himalayan salt & pepper to taste
  • 3 tsp granulated onion powder
  • 3 tsp granulated garlic powder
  • 1 1/2 tsp ground cumin
  • 1 1/2 tsp chili powder
  • 3 tsp whole dried thyme
  • 3 tsp dried crushed rosemary
  • 1/4 cup fresh cilantro
  • 1 cup low-sodium chicken broth
  • 1 packet taco seasoning (low-sodium preferred)
  • 1 (8 oz) package shredded Mexican cheese
