Diabetes-Friendly Chicken Stir Fry

Ingredients

Makes 4 servings

  • 3 tri-colored bell peppers, sliced
  • 24 oz chicken breast, cut into 1/2 inch pieces
  • 1 large onion, diced
  • 2 cloves garlic, finely diced
  • 3.5 oz broccoli florets
  • 24 oz riced cauliflower
  • 5 tbsp olive oil
  • 2 tsp sesame oil
  • 2 tbsp peanut oil (or substitute olive oil)
  • Salt & pepper to taste
  • 2 tsp onion powder
  • 2 tsp garlic powder
  • 2 tbsp Bragg's Liquid Aminos (or low-sodium soy sauce)
  • 3/4 cup low-sodium chicken broth
